Shrove Tuesday gluten free pancakes

I had German class after work today so I got home late. The kids were already in bed, my mother was watching some goddreadful reality show as usual and there was no sign of the husband yet – it didn’t take me long to decide that dinner was going to be pancakes!

pancakeingredientsI used 2 eggs + milled chia seeds + hemp seeds + maca powder. Cooked in coconut oil, topped with strawberry jam sweetened with grape juice, and accompanied by a glass of hemp milk mixed with goat’s milk (hemp milk on it’s own it a bit boring to drink).

In Estonia everyone’s eating pea&ham soup and fluffy little buns filled with whipped cream on Shrove Tuesday… before or after going sledding to see who has the longest ride down a hill. Once upon a time the longest ride meant the tallest flax plants next summer, these days it just means fun. I’m skipping the buns due to sugar, wheat and dairy, and I’m skipping the sledding due to no snow, but the pancakes inspired by the local tradition here were yum and that pea&ham soup is probably going to happen tomorrow.

      Oooh! How exciting, another German fan! I used to speak it quite well 10-15 years ago, now am taking a refresher course to ensure not all of it leaves my brain!

      The thing is that it’s so EASY to make these pancakes. If healthy was super complicated, I wouldn’t do it that often!
