I saw a recipe for gluten free / dairy free / sugar free / egg free sweet potato muffins the other day here on Magpie in the Sky blog and of course I needed to try to make these (the weirder the recipe, the more likely it is that I’ll try it :).
I didn’t actually have quite a few of the ingredients but I often improvise when baking so there was no stopping me. I used a mix of coconut oil & avocado oil, a mix of honey, coconut sugar & xylitol (I just had only small quantities of each left), almond milk, plain gluten free flour and for spice just a mix of cinnamon and nutmeg.
My 9-year old was still awake when I took them out of the oven and he said immediately “Oh, what’s that lovely smell?” (I love the way my kids say things like “lovely” – sounds so English 🙂. He ate two and asked for one in his lunch box tomorrow.

I ate two as well.

I love it when a new recipe is a success straight away.
