Lisa Gusto blogged about Amy Ruth’s pancake mix the other day and since I’m all for things that are gluten/sugar/diary free, I ordered both the cake mix and the chocolate chip cookie mix. We made the cookies tonight and for sweetener I used xylitol and agave syrup – they came out fluffy and sweet but nicely not too sweet. The boys ate a couple each, I ended up eating four! (they were little, that’s my excuse 🙂
Most of the time I don’t mind experimenting with gluten free flours to bake, but for emergencies it’s great to have a quick mix in the house. Another fab find with the help of the blogging world.
